Calzones

Yields: 13 calzones

Temperature: 375 degrees

Ingredients:

Dough:
  • 2-1/4 cup + 2 Tbsp warm water
  • 4 tsp yeast
  • 1 egg
  • 1/2 cup sugar
  • 6 Tbsp melted butter
  • 3 Tbsp dry milk
  • 2 tsp salt
  • 6-6 1/2 cups flour

Filling:
  • 2 lb ground beef
  • 1 Tbsp dry onion
  • 1 1/3 cup salsa or taco sauce
  • 4 1/4 Tbsp taco seasoning
  • 12 oz american cheese, grated

Directions:

For dough:
  1. Dissolve yeast in warm water. Add egg, sugar and melted butter.
  2. Stir in dry ingredients, adding enough flour until dough does not stick to fingers.
  3. Use dough hook and knead for 10 minutes or until elastic.
  4. Let rise until doubled in size. Punch down and divide into 13 portions.
  5. Pat each portion flat with hands. Put 1/4 cup filling onto each center and pinch ends together to completely enclose.
  6. Put seam side down on baking sheet 2 inches apart.
  7. Let rise until doubled. Bake at 375 degrees for 20 minutes.

For filling:
  1. Brown ground beef and drain.
  2. Add taco seasoning and onion. Chill overnight.
  3. Add salsa and cheese right before using.
  4. Mixture should form a ball that holds together when squeezed. Use 1/4 cup when portioning.
