Chicken Wild Rice Soup

Ingredients:

  • 1/2 stick butter
  • 1 cup wild rice
  • 1/2 cup onion, chopped
  • 2 stalks celery, chopped
  • 1/4 lb chopped mushrooms
  • 1/4 lb chopped carrots
  • 1-1.5 tsp herbs de provence
  • 1/2 tsp ground mustard
  • 1/2 tsp curry powder
  • 32 oz carton chicken broth
  • 1 1/4 cups half-and-half
  • 1/2 cup heavy whipping cream
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/3 cup flour
  • 1 lb smoked chicken breast, chopped up
  • 1 Tbsp parsley

Directions:

  1. Melt butter, add onions, carrots, and celery. Saute then add mushrooms.
  2. Add flour and stir well. Gradually add broth, stirring constantly. Bring to a boil then reduce heat to a simmer.
  3. Add rice, chicken, salt pepper, mustard, curry powder, parsley, and herbs de provence.
  4. Allow to heat through then add half-and-half and cream. Simmer up to 2 hours- do not let boil or roux will break.
