Famous Spaghetti Sauce

Yields: 6-8 servings (makes a lot)

Ingredients:

  • 1/2 cup olive oil
  • 1/2 cup butter
  • 2 cups finely-chopped onions
  • 2 lb ground beef (lean)
  • 8 strips finely-chopped bacon
  • 8 cloves garlic, chopped
  • 6 Tbsp finely-chopped parsley
  • 2 Tbsp salt
  • 2 tsp dry crushed red pepper
  • 2 cups canned tomatoes (or 2 cups canned tomato juice)
  • 1/2 cup red wine
  • 2 cups tomato purée
  • 4 Tbsp tomato paste
  • 2 finely-chopped carrots
  • 4 stalks finely-chopped celery
  • Pepper to taste

Directions:

  1. Warm olive oil in saucepan over low heat. Add butter and simmer until melted.
  2. Add onion and saute until golden. Add ground beef and bacon, sauteing until brown, stirring occasionally.
  3. Add garlic, parsley, salt, blacj and red pepper, then cook over low heat for at least 10 minutes.
  4. Add wine, cover and steam for a few minutes more.
  5. Add tomatoes, purée and paste. Bring to a boil and add carrot and celery.
  6. Again, cover and cook over very low heat for 1 hour, stirring occasionally.
